time on my hands

since coming back to oklahoma sunday night, i haven't had much to do besides getting michael to his dr. appointment today. i can't remember the last time i didn't have anything to do. i'll admit, it's nice. maybe god is giving me a breather...i keep wondering why we're supposed to stay behind and not be in russia. but i know it will be revealed someday.

the weather has been wonderful, so michael and i have been going on walks right before the sun sets. when we get home we eat dinner, and secretly i've started to feel like an old couple on a regular schedule. ok, so it's only been two days...but that's a lot for us! during the semester we rarely get to sit down to dinner together between two different schedules of school and work. i really appreciate this time i have with him right now.

by the way, his appointment went well. contrary to what the ER doctor said, he does not have to have surgery. the tendon he cut wasn't a very important one i guess, so it will heal with time. we thought about bookin' it to russia and back, in time to get his stiches out, but we reconsidered and decided to save the money for a longer trip this summer.

here's what we ate after coming back from our stroll ; )


my version of olive garden's toscana soup (altered from top secret restaurant recipes)

4-ish cups chicken stock
1 can evaporated non-fat milk
2 medium russet potatoes
a lot of chopped kale
1 pkg. spinach garlic chicken sausage (target brand, break into pieces)
1 tsp. salt
1 tsp. crushed red pepper flakes

saute the sausage until browned (it usually comes precooked). combine stock and milk in stock pot over medium heat. cut potatoes into small chunks and add to soup. add the kale and sausage. add spices and let soup simmer for about an hour (or til' potatoes are cooked through). serve with a hearty slice of rustic bread and enjoy!

no heavy cream, no red meat...my kind of soup!

update...

don't expect me any time soon st.petersburg.
on christmas morning, michael was opening his second present... with a knife. we all know how this story will end... he cut his thumb open. a pretty deep cut. we spent many hours in the ER on christmas day and found out michael almost completely severed the tendon inside his thumb, will need surgery very soon, and should not leave the country. this means we are not on our way to russia with everyone : ( fortunately, we were able to refund our tickets and save the money to go this summer. i was obviously devastated, as i've looked forward to our return all year. however, i was reminded by my art teacher (who is on the trip), that there is a reason for everything and we just don't know why god wants us to stay here. He is so tricky sometimes, but i know His plan wins. pray for michael and his healing, and the group in russia right now.

st.petersburg here i come

i could definitely use some more time to prepare, but i can't wait to get there! this holiday season seems like it has just rushed by. sure i've sipped some hot cocoa here and there (i work at starbucks)...but i sure sipped it fast. tomorrow we'll leave to go to my momma's house in texas to celebrate christmas with the family-including aunts, uncles, and cousins! then the day after christmas, we're off to russia! it's gonna be a cold one this year. i don't plan on standing outside of any palaces for two hours this time. once you've seen one of them...you've seen them all! (that doesn't include the hermitage. i would go there a thousand times)

friends


they are delightful. during our short time together we enjoyed...
watching elf,
eating michael's wonderful chipotle ale chili,
sipping lattes at coffee slingers,
eating lunch at ingrid's kitchen,
sitting around our kitchen table for hours,
riding in lindley's incense-filled car,
and
conspiring together.

we did not enjoy...
saying goodbyes.

peace


i'm done! i had my final final tonight. tomorrow will be different from all other fridays before...i will sleep in. i will sleep for more than five hours and it will be glorious. then...i will finally get to my christmas projects. i'll finish sewing our stockings too. i might even bake.

delightful


a little trick i learned from my mom...
instead of throwing away your citrus peels, put them down your garbage disposal. when you turn it on it will release abundant citrus oils into the air, filling your kitchen with a crisp and clean aroma.

i ate a clementine earlier and forgot i had tossed my peels down the sink. while doing the dishes i turned on the disposal and got a delightful surprise : )

seasons

there is a time for everything, and a season for every activity under heaven...

times are changing, and i didn't realize that i would be affected. but that doesn't mean i can't make cookies! these are next on my list.
this is a hard season for us, but one to be celebrated. michael and i have been married for six months as of december 8th! he gave me one of my christmas presents early...a brand new beautiful bible engraved with my new name-erin elizabeth king : )

this is our first christmas tree...

it's small and the presents are absent beneath, but it's our tree nonetheless.
thanksgiving was a much needed break. the food was fabulous and the family time abundant.
