pizza night delight

for the pizza dough:
1 cup warm water
1 tsp. honey
1 pkg dry active yeast
1 1/4 c. whole wheat flour
1 1/4 c. all purpose flour
1 tsp. dried oregano
1 tsp. crushed red pepper flakes (the secret ingredient!)
1 tsp. salt
vegetable spray for bowl
cornmeal for pan

in small bowl, combine the water, honey & yeast. let stand until foamy (about 10 min.).
02. in large mixing bowl, combine the flours, oregano, red pepper, and salt.
03. add yeast mixture and stir until a soft dough forms.
04. turn dough out onto floured surface and knead until smooth, adding flour as needed (about 7 min.)
but...if you have a kitchenaid w/a dough hook, use that instead of wearin' yourself out : )
05. clean large bowl and coat w/spray.
06. form dough into a ball and put in bowl to rise. cover w/a towel.
07. let rise in a warm place until doubled in size (about 1 hour).

preheat oven to 425 degrees.
coat pan with cornmeal and stretch or roll out your dough onto it.
add whatever toppings you'd like! bake for about 20 minutes.

we usually do a mediterranean style pizza with:

artichoke hearts
sun-dried tomatoes

but...we were out of most of those things and used what was on hand:
green bell pepper

i love pizza night with the husband!

yeah....it's me...Jan just got back Friday and I was so jealous hearing about all the kids and how well things seem to be going. Booking my airfare this week, I hope.

That looks so good!
We usually end up doing a pizza night about once a week with ricotta, spinach and garlic. Since I keep dough in my fridge I can pull it out and we bake it for only like 10 minutes at 500 on the pizza stone. Healthy, quick, and easy. :)

Hope everything is going well with you. Sad I missed seeing you when I was down there last month.
