this is my great-grandmother buntley's recipe. i think we would have gotten along well. she was an amazing artist-painted the most beautiful textured oils. she loved lemon. she was the 3rd woman to receive her master's from southwestern oklahoma state. i hear she was very frugal, but she cared for her home and the details in it as if she were rich. i like her.

lemon chess pie
4 eggs
2 c. sugar
1/2 c. lemon juice
1/2 c. melted butter
1 t. corn meal
1 t. flour
1/8 t. salt
1-9 in. unbaked pie shell

01. beat eggs thoroughly.
02. gradually beat in sugar.
03. add remaining ingredients, beating well.
04. place crust into pie pan, and pour mixture into it.
05. bake at 350 degrees for 30-40 minutes or until brown.
tip from great-gma: don't overbake!
