lunchtime

this is my variation on rachael ray's chicken salad. i've always loved curry in mine so i followed her's a little...you know i'm not very good at accuracy when it comes to recipes.

1 cup plain greek yogurt
juice of one lemon
3 ish T. curry powder
1 T. honey
ground cinnamon for sprinkling
3 T. EVOO
S&P
3 cups chopped cooked chicken
1 cup seedless grapes, halved
1/4 cup slivered almonds, toasted
1 stalk of celery finely chopped

01. in medium bowl, combine the yogurt, lemon juice, curry powder, honey; sprinkle with cinnamon, then whisk in EVOO. season w/S&P.
02. add the chicken, grapes, celery, and almonds to the dressing and toss to coat. i served mine on croissants and they were delicious. you could also serve over salad, on a pita...the possibilities are endless!
