this is (drum roll please)...asiago cheese beer bread! i was introduced by my friend emily (via cooking light) from recipe club, who by the way is getting married next friday : ) now, i don't like beer. not even one sip. but throw it in bread or chili and i'm a fan. try this rich recipe with a hearty fall soup or stew. you won't regret it.

Basic Asiago Beer Bread
1 T. olive oil
1/2 cup finely chopped yellow onion
1/4 t. black pepper
1 garlic clove, minced
3 cups all purpose flour
3 T. baking powder
1 t. salt
1/4 cup sugar
1 cup shredded asiago cheese
1 12. oz bottle Peroni Italian beer
cooking spray
2 T. melted butter, divided


1. preheat oven to 375 degrees.
2. heat oil in a small skillet over med-low heat. add onion to pan; cook 10 minutes or until browned, stirring occasionally. stir in pepper and garlic; cook one minute.
3. lightly spoon flour into dry measuring cups; level with knife. combine flour, sugar, baking powder, and salt in a large bowl, stirring well with a whisk. make a well in the center of mixture. add onion mixture, cheese and beer to flour mixture, stirring until just moist.
4. spoon batter into loaf pan coated with cooking spray. drizze 1 T. butter over batter. bake for 35 minutes. drizzle remaining 1 T. butter over batter and bake an additional 15-20 minutes or until toothpick inserted into center comes out clean. cool in pan 5 minutes. remove from pan and cool completely on wire rack.
