have you ever had UNO's spinoccoli pizza? it is absolutely wonderful, but deep dish and not so calorie friendly. so, i created my own last night using my whole wheat crust recipe and only using half of it to make a thin crust. you can have two giant slices of this (half of the pizza!) for only about 500 calories.
loaded "spinoccoli" pizza
1/2 whole wheat crust recipe (roll out thin onto stone w/cornmeal)
1 medium onion
2 roma tomatoes
1 small head of broccoli
1/2 cup spinach (fresh or frozen)
1/2 cup pizza sauce
about 1/2 chunk fresh mozzarella, cut into thin slices
portabello mushrooms if you desire
grated parmesan cheese
1. make crust ahead, then freeze half for later use. preheat oven to 400.
2. slice onions, drizzle w/olive oil and S&P and roast in oven for about 10 min. steam broccoli just a little, and cut tomatoes in large chunks.
3. add broccoli and tomatoes to roasting sheet with onions and continue to roast until browning occurs.
4. load up your pizza with everything and bake at 375 for 15-20 minutes until cheese is brown and bubbly.
you will be full!
