pancetta & turkey meatloaf sandwiches

1/2 cup bread crumbs
1/4 cup chopped parsley
2 large eggs, lightly beaten
2 T. whole milk
1/2 cup grated romano (i used parmesan)
1/4 cup chopped sun-dried tomatoes
3/4 t. salt
3/4 t. pepper
1 lb. ground turkey
10 oz. sliced pancetta (i used bacon)

mayonnaise:
3 cups arugula
1 cup mayonnaise
(i did some fresh basil from the garden and some sun-dried tomatoes)

4-6 italian rolls


1. preheat oven to 375.
2. in large bowl, stir together the bread crumbs, parsley, eggs, milk, cheese, sun-dried tomatoes, S&P. add the turkey and gently stir to combine, being careful not to overwork the meat.
3. on a baking sheet lined w/parchment paper, lay out the pancetta (or bacon), overlapping the slices into a large rectangle shape.
4. in the middle of the rectangle, place the turkey mixture, shaping into a loaf. using the parchment paper, wrap the pancetta up and around the turkey loaf to cover completely.
5. squeeze parchment-covered loaf w/your hands to secure the pancetta and solidify the shape of the loaf. while still covered in parchment, bake the loaf until the internal temperature reaches 165 on meat thermometer, about 45 min.
6. remove from the oven and let cool.
7. in a blender, combine the arugula and mayonnaise (or your choice of ingredients) and process until smooth. store in fridge until ready to serve.

grill up the bread, spread on the mayo, add the turkey loaf (this ain't your grandma's meatloaf), and maybe some spinach! these sandwiches are special to us. 8.19.07 michael proposed on a picnic.
